The Cove Beverage Company was founded by Robert Meisse in Ontario, Ohio, driven by a deep appreciation for nature. In the 1970s, Robert discovered maple sap and the art of producing maple syrup. As the saying goes, "You get bit by the maple bug," and we fell in love with the idea of nature providing sweet sap each spring. This passion grew into a state-of-the-art maple production facility in Ohio, where we’ve processed millions of gallons of sap over the past 40+ years.
Our expertise in maple production inspired us to create a groundbreaking product: Maple Nectar™.
The journey began in the early 1980s, fueled by an interest in osmotic desalination and water purification for reef tanks- a side hobby of Robert’s. During this time, we acquired one of the first commercially available reverse osmosis systems designed to purify water for laboratories. However, we saw a unique opportunity to apply reverse osmosis technology to maple sap, a concept that was unheard of at the time. Through extensive experimentation, we developed a method to concentrate maple sap without using high heat—an innovative approach that preserved the sap’s natural qualities. While modern systems exist to remove water from maple sap, they are limited in the concentration levels they can achieve. Our process, refined over decades, allows us to create Maple Nectar™ with a concentration of up to 66 brix depending on need.
But the innovation didn’t stop there. We focused on creating a products that maintained the sap's original flavor, mineral composition, and clarity without developing the caramelized flavor associated with maple syrup. Unlike traditional syrup production, which uses high heat to concentrate the sap and cause caramelization that produces the familiar maple taste, our method avoids high heat, resulting in a sweetener unlike anything else on the market. It does not have a maple flavor. It has a very unique, sweet, and refreshing mouth feel and taste.
